Replenishing from pregnancy workshop + beetroot truffles

Our Nutritionist Emma Lynasrecently teamed up with healthy chef and queen of making home cooking simple – Melanie Leeson from Mettle + Gracefor Shift Presents: The Fourth Trimester – Replenishing from Pregnancy & Recovering from Birth.It was such an amazing and informative workshop that showed just how simple you can make optimum nutrition after bubs arrives.

 

Emma and Mel worked together to create tons of recipes that required specific food and nutrients to help with replenishing and recovery after birth. One of my favourites was the Beetroot Truffles. Rich in magnesium and nutrients to help with blood flow and gut health, the added brewers yeast for breastfeeding mums can assist with milk supply too. Not pregnant or post part? All good, these Beetroot Truffles are still a snack friendly, kid friendly option!

 

 

CHOCOLATE BEETROOT TRUFFLES
Makes about 26 balls.

250g raw Beetroot

6 Medjool dates (remove pips)

2 cups Desiccated Coconut

1 cup Cacao

2 tbls of Coconut Oil

1/4 teaspoon of ground Cardamom

METHOD
Simply add all ingredients to your food processor and blitz until it comes together as a dough.

Portion one tablespoon of mixture and roll into a ball. You can then toss the balls in extra desiccated coconut or freeze the balls for 4 hrs then coat with melted chocolate.

Store in an airtight container in the fridge or freezer. Store in the freezer for up to 3 months.
