WARM FIG + CACAO CHIA PUDDING
On my never ending quest to love chia I stumbled across this little creation. Let me digress a little here … Remember when you were a kid and, most likely, you didn’t love your vegetables. Chances are your mum came up with the ingenious idea of using tomato sauce as the magic elixir to help you get those carrots down the hatch. Enter Tahini, cacao and figs. EVERYTHING tastes better with tahini, cacao and figs. I was optimistic they would do the trick for chia.
Why the need to like chia? Well when dairy and grains are out chia is a versatile powerhouse of sustainable energy and fibre. Those who have to go grainless due to any reason – Coeliacs (GF grains obviously ok), paleo, autoimmune protocols, ketogenic diets, ‘candida’ diets etc can find a little solace in ye olde chia as a breakfast ‘cereal’.
This porridge is filled with natural fats, fibre and minerals – not to mention light on the carbohydrates if thats your thang. And i’m please to report it definitely passed the taste test.
Warm Fig & Cacao Chia Porridge
Serves 1
2T Chia Seeds
1/2c Milk of your choice eg almond, rice, coconut, goats etc
1tsp Rice syrup or other sweetener (optional)
1-2 Organic dried figs, chopped
2t Cacao nibs
1tbsp Organic tahini
Place chia, rice syrup and milk in a pot and on the lowest heat, stir until most of the milk is absorbed. Please don’t heat it until piping hot – it should be just a little warmer than body temperature.
Pour chia porridge into serving bowl and top with tahini, figs and cacao.
Eat!
CHOCOLATE HATERS – Top with 1/4c berries & almond butter.
LOW FODMAP’ers – Use rice milk as your milk of choice to help sweeten & then top with 1/2 banana, cacao nibs and macadamia spread.
KETO KIDS – Nix the rice malt syrup, use unsweetened almond milk and go easy on the figs OR exclude the figs all together and use a few drops of stevia to sweeten.
